Butternut Squash Soup

So in the spirit of healthy eating, I made butternut squash soup with wholemeal pita bread for lunch. I'm not trying to brag, but it actually tasted amazing! And it was so easy to make.

butternut squash, peeled, deseeded & chopped
onion, peeled & chopped
carrot, peeled & chopped 
25g butter
500ml vegetable stock
tsp chilli flakes
salt & pepper 

- melt butter and soften squash, onion & carrot for 5-10 minutes until the whole kitchen smells amazing 
- add veggie stock and bring to the boil then lower the heat and leave to simmer until everything is soft, mixing occasionally 
-add chilli flakes and mix well then put everything in a blender until it's a smooth consistency (I only blended for about 30 seconds)
- taste and season with salt & pepper as appropriate and eat!

The soup I made was enough for two of us, and then I kept another portion in the fridge, and it tasted just as good the day after! 

Good start to changing my ways - healthy and clean eating today, exercise tomorrow morning...?
