| tasted SO much better than it looked |
After a long day at work, cooking some long complicated meal is the last thing I'm thinking of doing. Tonight, however, I was cooking for my family so I had to make some sort of effort. Walking around Sainsburys I was really craving a burger
(shopping hungry is never a good idea) but I managed to ignore my stomach and follow my brain so chose to make a bean chilli burger with sweet potato fries -
(no matter how tired I am, I can always find the energy for sweet potato fries).
So I found a
recipe for the burger online and it actually did only take 15 minutes to make
(it probably would have been less if I'd had a better blender!) and it tasted amazing! The sweet potato fries I don't actually have a recipe for because I've made them so many times I just don't need one any more.

Basically
(in case you don't know) you just peel and cut the sweet potato into chip shapes, and then you have to lay out all the pieces on a tray, coat in olive oil, salt and pepper, making sure they're all covered. They
(the tricky bit) you have to lay them out so that none of them are touching - I tend to do them in lots of little rows - because otherwise they'll go soggy instead of crunchy and chewy. Just cook them at about 200 degrees celsius for about 20 minutes or until they start looking a bit like they might be burning. Originally I used to turn the chips over half way through cooking but I haven't bothered the last few times and it hasn't seem to make any difference. Just experiment with it until you find your personal preference.

So that was delicious, and then since I had been cooking and was therefore getting into the spirit of things, I decided to do pudding too
(and use up those bananas that had been sittng on the side all week!) I made
these chocolate puddings that I've also made several times, and only takes 10-15 minutes to make.
All in all - top meal, wasn't too much hard work and I ate pretty healthily tonight compared to the
high in cholesterol and saturated fat beef burgers and french fries I could have ended up eating, so I'm pretty proud of myself for that. Now to get on with that washing up....
