Gluten Free Breakfast Bread?

In the spirit of clean eating I thought that it'd be good to try to make something I could eat for breakfast that wasn't toast. Also, my younger sister is gluten and lactose intolerant so any time I can find something that she can eat I'll try to make it so she has something new and more interesting that usual (she's pretty lazy when it comes to experimenting with new recipes.)

So I saw a recipe for Strawberry Coconut Bread by Athletic Avocado which looked really easy and delicious and even though the coconut oil cost £6 I went ahead and tried to make it. I say tried because it ended up definitely not looking like the picture.
Nevertheless, I will continue to search for a delicious (& idiot proof) gluten free/healthy bread recipe so I can eat something substantive but healthy for breakfast (porridge would be perfect but I'm a tiny bit allergic to oats) so if anyone has any ideas, please leave a comment and let me know.

I did, however, manage to make more soup - Carrot and Coriander - trying to use up the left over carrots and coriander (from the burgers) and this time, I even used a recipe! I'm sorry to say that it didn't really taste as nice as the Butternut Squash; maybe I just got lucky last time and I'm not actually a soup genius.

Anyway, the fight continues; continuing to try to waste as few things as possible, whilst trying to do the best for my body. I've been thinking a lot about the make up products I use, not just about how much waste they leave when empty and probably create whilst being made, but also how the chemicals in them could be damaging my skin.
